Garden Quesadillas

I got the idea for this meal from a friend who used to be a vegetarian.  I added chicken 🙂

Flour Shells

Shredded Cheddar Cheese

Southwest Flavored Chicken




Butter in the pan, tortilla in the pan. Sprinkle in cheese and a bit of each (Chicken, tomato, mushroom and spinach) and a little more cheese.  Top with another Tortilla and spread lightly with butter or margarine.  Cook on Medium heat for 3-4 minutes on each side until cheese has melted the whole thing together. Cut into triangles and serve with Salsa and/or Sour Cream.
