Mimi’s Pepperoni Rolls

Mimi is what Astaire will be calling my step-mom Kathy.

What I like about her rolls is that they are super packed with pepperoni and they are smaller, but you can eat like 5 at a time, and they usually come with chocolate chip cookies.

12 oz water

1 ¾ t salt

2 T tub butter

4 cups white flour

2 T sugar

2 T non-fat dry milk

2 ¼ t yeast

Place on dough cycle in bread machine

Cover and let raise in warm area for 1 1/2 hours. Then make the pepperoni rolls and put them in a greased glass 9×13  and let them set covered with a towel for 1 hour before baking at 350 degrees for 30 minutes.

She mentioned to me that she uses 12 oz of pepperoni for the 12 rolls that this recipe makes.

***I personally don’t have a bread machine– but I am going to alter the recipe this way:

Mix ingredients in my kitchen aid mixer. Cover and let raise in warm area for 1 1/2 hours. Then make the pepperoni rolls and put them in a greased glass 9×13  and let them set covered with a towel for 1 hour before baking at 350 degrees for 30 minutes.

    I love Kathy”s of couse they are how our Mom makes them, now my mouth is watering for them and I’m in Salt lake City

    Just a little clarification…Place on dough cycle in bread machine (which takes 1 1/2 hours)…..OR….Mix dough by hand or kitchen aid mixer; then let raise approx. 1 1/2 hours. Not so sure you would let it raise that long because the bread machine time includes the mixing of the dough. Just don’t use bread machine then let raise an additional 1 1/2 hrs. I recommend using the bread machine. Then I put mine on a cookie sheet (don’t let them touch each other..lol)

    OK, just a couple more things…Out of that 12 oz. of pepperoni, you’ll put 12 slices of pepperoni in each pepperoni roll and of course it makes 12 pepperoni rolls. You may have a few slices left over. When you take the pepperoni rolls out of the oven, you will need to immediately “grease” the tops of them by put a little Crisco on a paper towel and applying it to the tops of the pepperoni rolls while they are still hot! Once they are cool; immediately freeze! I never ever let my pepperoni rolls set around…lol. When you come to my house, you’ll either get them really fresh (straight out of the oven & hot) or you’ll get them frozen (perfectly fresh & hot when you microwave them). And like Tayla said, they usually come with chocolate chip cookies. She usually get’s the “freshly frozen pepperoni rolls” with “freshly frozen chocolate chip cookies” when she comes to visit. And again, enjoy! lol
