Twice Baked Potatoes

Our recent trip to the cabin got everyone talking about these potatoes…they were delicious for sure..and they are super easy to make.  Definitely don’t need a special occasion to whip these up!

What you need:

Large Russett Potatoes (as many as you have people +1)

Sour Cream

Cheddar Cheese


Bacon Bits (I prefer fresh, not canned.uck)

Butter & Salt

Fresh Minced Garlic (1 teas?)

Directions: Preheat Oven to 400. Wash Potatoes. Place Potatoes in oven straight onto rack (do not poke, do not wrap, do not pass go or collect 200 dollars) Bake for approximately 1 hour or until they “feel” done. Let cool about 15 minutes. Slice in half. Scoop insides into mixing bowl. Add butter, sour cream, garlic, & salt as if you were making mashed potatoes (using sour cream instead of milk).  Mix with mixer until smooth- Add in some shredded cheese, diced scallions, and bacon bits. Scoop mixture back into potato skins and top with shredded cheese and diced scallions (and bacon?).  Put back into the oven (350) and bake until golden brown and ooey gooey.

*Note- You can also prepare these ahead of time and refrigerate them.  I did this for the cabin.  I made them and put them in the dish as you see pictured and kept them in the fridge all day.  Then when we got to the cabin I just popped them in the oven and it took about 25-30 minutes for them to heat back up. Perfect for mama’s who have to cook in shifts!
